Wordless Wednesday – St. Patrick’s Day Whoopie Pies

I’m most certainly not Irish but I do love to celebrate any and all holidays, especially when the opportunity to bake with a little creativity is involved. Earlier this year Betty Crocker presented a challenge to incorporate Lucky Charms cereal into a festive St. Patrick’s Day treat and these fun Lucky Little Whoopie Pies came to mind. With a mix of rich chocolate cake, sweet minty buttercream and crunchy Lucky Charms marshmallows, I’m pretty sure this treat fit the challenge quite well. In fact, I was pleasantly surprised to see the recipe is being featured on the BettyCrocker.com St. Patrick’s Day page! (I’m pretty excited!)
