For months now, my toddler daughter, Emmaleigh, has been completely obsessed with the Mickey and Friends characters, not that I blame her. Mickey, Minnie, Pluto, Donald, Goofy, Daisy … they’re a lively bunch of characters that you can’t help but love. And for her second birthday, Emma wanted nothing more than to have a Mickey Mouse cake. Being the cake decorating obsessed mother I am, I was happy to oblige her.
While I typically like to get creative and create layered cakes with Marshmallow fondant, time got away from me and I didn’t get my ideas and supplies together in time. In fact, I was behind schedule so much last week that we had to postpone the Mickey Mouse birthday party a few days.
Luckily, I have a lot of great resources at my fingertips, Wilton being one of them. While they are well known for creative dessert ideas, they also have a lot of amazing basic products that can make a birthday cake quite special. I turned to the Wilton Famous Character shop to seek out the Mickey Mouse cake decorating supplies I needed and even got some last minute help from Wilton with the icing and decorations. Instead of slaving in the kitchen whipping up homemade buttercream, I let my good blogging friend, Emilie, convince me to use Wilton’s Decorator Icing, which tasted surprisingly good, not buttercream good, but better than just edible.
This being my second time using a Wilton shaped pan, I remembered how vital it is to properly grease and flour every nook and cranny of the cake pan before pouring in the batter. Doing this properly will allow your cake to easily pop right out of the pan, maintaining the shape and lines for decorating later. For the Mickey Mouse cake, I used the Wilton Mickey Mouse gel coloring and while black feels like an impossible color to achieve with frosting, it’s not. When I finished coloring the icing, it looked more like a deep purple but after about an hour, the color deepened into what appears to be very black.
I also took the time to make the birthday girl her own personal cake which was topped with a frozen buttercream transfer, thanks to the video demonstration from Susan Matusiak, Wilton expert decorator. If you have a few moments, it’s really worth it to watch the video because these transfers are surprisingly easy and fun to make. While the detail work didn’t come out perfect, it still came out looking like Minnie Mouse, which Emma just loved!
