I’ve kinda been on a roll with cooking this week, even baking more than usual. It probably has something to do with the fact that I’m finally not down with a virus and have some extra time on my hands.
So I’d seen a few recipes for a gooey butter cake floating around and I have to say, they look really good. The cake, not the ingredients. Don’t get me wrong, I’m huge fan of butter, some (like my husband) might even say I’m obsessed with it. At any given time there’s 5 – 7 pounds of Land O Lakes salted butter hanging out in my fridge. But when I see a recipe calls for EIGHTEEN tablespoons of butter, I start to think it’s edging towards overkill.
And I was right.
This St. Louis Style Gooey Butter Cake tasted like I was chewing on a stick of butter. Now there are folks in this house that would call that a treat (like my butter stick snatching toddler) but for me, I’m just not a fan of it.
The cake is a bit crispy on the bottom (my fault for over-baking), chewy in the center and then there’s this layer of gooey butter topping and a sweet lemon zest and powdered sugar topping. My husband .. he loved it! Butter cake is a favorite of his but this is one cake I just can’t sink my fork into.
