I grew up watching March Madness basketball with my dad. While it wasn’t and still isn’t my favorite sport, it’s one we still watch occasionally, mostly because it means I get to cook up some awesome food. One of my favorite ways to cook when it comes to watching games is using my slow cooker. It means I get to spend less time in the kitchen and more time enjoying the game with my family. One of my families favorite’s is my slow cooker Chicken Nachos loaded with large chicken chunks, salsa, sweet corn and fresh veggies all piled over chips.
3 (about 1.7 lbs) boneless skinless chicken breasts, cut into ¼ inch-wide strips
1 packet Taco BellTaco Seasoning Mix
2 tablespoons all-purpose flour
1 red bell pepper, cut into ½-inch-wide strips
1 green bell pepper, cut into ½-inch-wide strips
1 can sweet corn
1 small jar of thick & chunky mild salsa
2 cups Mexican shredded cheese (4 cheese variety)
sliced green onions
Spray a 6 QT slow cooker with non-stick cooking spray.
In the bottom, toss the sliced chicken with taco seasoning and flour until coated.
Add peppers, corn and salsa. Mix.
Cook on high for 4 hours or low for 6 – 8 hours.
Serve over corn chips with shredded cheese and your favorite toppings.
