The Wilton Black Forest Cake Roll: From Disaster to Delish

Whenever possible I try to avoid self humiliation but this is one of those times that it was just too funny not to share. It also helps that I made a horrible mess into a beautiful dish with quick thinking. So if you happen to make a cake roll disaster, here’s a great solution.

So here I am in the kitchen, video camera ready, going through all of the steps and demonstrating how to make this beautiful black forest cake roll. I try something new and use the Chocolate-Chocolate Cake Batter recipe from Wilton, melting chocolate, lots of butter … it was finger lickin’ good even before it hit the oven.

Once the batter was ready I went back to my Flip video recorder and spread the batter in the Wilton Ultragold 11 x 17 Jelly Roll Pan. This pan was made for the exact cake I was attempting to bake!  Rather than completely embarrass myself and show the video, I just pulled a few photos from it.

The batter was beautiful and smelled way more delicious than any boxed cake mix I’ve ever used.

After some time in the oven, a few pokes to make sure it was baked evenly and out came this gorgeous sheet of chocolate cake.

So here’s where it got tricky. I checked several cake roll sources, followed the instructions to a T and my cake rolled up beautifully. It seriously couldn’t have been more perfect …. until I unrolled it.

DISASTER!!!!!

My poor cake just broke to pieces. No amount of icing could fix this.

But hey, I’m a mom, I’ve got tricks up my sleeve for every situation. There’s no way I’m letting this get me down and I’m certainly not letting that chocolate cake go to waste!

After some digging through my cabinets I find my Trifle Dish and get to work. First a layer of chocolate cake chunks, then a layer of the Stabilized Whipped Cream then a generous topping of cherry pie filling. Repeat and Voila!

    Why did you need to unroll it?

      With cake rolls you are suppose to roll it while it’s warm so the shape will set, then you unroll it after it has cooled, add your filling and carefully roll the cake back up. I never made it quite that far.

    I *love* the Wilton Tent Sale! If you’re anywhere within a day-trip driving distance, it is fun and worth the trip. I grew up about 5 minutes from there, so I’m going to try to make it in June.

    That looks good. I think a chocolate cake roll is harder to make than a white cake roll, it is more likely to break.

    I have a trifle bowl that I asked for and never tried yet! THAT black forest cake trifle looks SO good…I will try it with fresh strawberries, now that they are in season. SO luscious and you must be a VERY seasoned cook to save the day like that!
