This is the first year in the 12 years our family has been together that we didn’t go and buy fireworks to set off for July 4th. Not even sparklers. As dry as our lawn is I imagine fireworks would be even more hazardous than usual.

Even though we’re not doing a big cook out or the fireworks, I still wanted to make this day special for the kids. After a good long walk this morning I got to work in the kitchen to whip up these Star Spangled Red, White & Blue pancakes …. quite fitting for the 4th of July. All you need is your favorite pancake recipe, some no-taste red food coloring, blue food coloring and plenty of whipped cream. I made these silver dollar sized so I could stack them up for a red, white and blue theme, tucking puffs of whipped cream between each pancake.

Since I’ll be taking the rest of the day off to relax and hang with the kids, I hope everyone has a safe and Happy 4th of July!

  1. Yum love pancakes, and those plates are adorable! Happy 4th to you and the family :)

  2. So fun and festive–I love it! The plates are perfect for it too. :) I hope you had a great 4th, despite the lack of fireworks!

    • It’s funny … those plates are ones I found for $1 each on clearance like 4 years ago knowing I might use them someday I bought them up.

  3. What a sweet patriotic breakfast to help celebrate the holiday in style!
Hope you and your family had a safe and happy 4th of July :)
