Spring Flower Cupcakes with Edible Grass Cups

Two days ago I would have boasted about how excited and fortunate I feel to have such nice Spring weather. The sun was shining, my magnolia tree started blooming and even my tulips started popping up through the ground. But then, winter came back with a flurry vengeance. We got harsh winds, freezing temperatures and even some snow. I shouldn’t have gotten so excited knowing just how unpredictable March weather can be.

Fortunately, I got to hold onto a bit of that Spring feeling with a new cupcake pan I got from Wilton. The Springtime Cupcake Pan is one of the newest products for 2011 from Wilton that is unlike any other cupcake pan I’ve ever seen. The base of the pan has a shallow “mini” cupcake cavity while the top portion is shaped into Spring flowers and butterflies.

While the directions for this pan suggest that you don’t fill the batter above the small cavity, I would probably fill it just a tad over the next time as my batter didn’t quite rise and fill the outer edges of the designs.

The fun part of course is decorating. While there are 101 ways to decorate these Spring flowers, I decided to keep it simple with colored sugars and Wilton’s colored decorating icing.

If you want to go beyond the basic cupcake, you’ll want to try the candy grass technique to create edible candy cups for these pretty little flowers. It’s a really easy technique that involves paper cupcake liners, green candy melts and a parchment triangle. You don’t need steady hands or perfect piping skills because grass is far from perfect!
