When it comes to dinner during the cold, winter months, my go to recipes usually involve the oven. There’s a lot of comfort food that gets baked in there and it helps heat the house up as an added bonus. But there are days when I’m really just too tired to do any actual cooking. That’s when I turn to my slow cooker. If I know the following day is going to be extra busy, I make sure I have the ingredients on hand to toss in the slow cooker and let it do all of the work for me.
One of my kids’ (and husband’s) favorite meals is stuffed peppers. Personally, I love them too but I despise cooking them. There’s so much prep work that goes into making this dish and it requires quite a few pots which means extra clean up. Fortunately, there’s a way to get that comfort food meal into the slow cooker with very little work involved.
This stuffed green pepper soup starts with browning a pound of ground beef in a skillet. That gets strained and dropped into the slow cooker along with a packet of meatloaf seasoning and of course, lots of fresh diced green peppers and onions.
Next, I turn to my fridge and pantry for the staples that really give this soup a kick of flavor. I always have several cans of HUNT’S Diced Tomatoes on hand which are 100% natural tomatoes peeled with FlashSteam, not harsh chemicals. And of course, we never go without a bottle or two of KRAFT Grated Parmesan Cheese which is made with 100% real Parmesan cheese.
The sauce, diced tomatoes and Parmesan cheese go into the slow cooker which gives this soup a rich and slightly creamy flavor.
The only thing left to do is add some beef broth for a thin, soup texture and let the slow cooker do the rest of the work. Just before serving I add cooked white rice.
When the family is ready to eat, I serve up the stuffed green pepper soup in cute, little soup crocks and top it off with an extra pinch or two of KRAFT Grated Parmesan Cheese. This soup is most definitely a meal in itself but sometimes we like to add a grilled cheese sandwich.
- 1 pound ground beef
- 3 green bell peppers, diced
- 1 small yellow onion, diced
- 1 – 1.5 oz packet of meatloaf seasoning
- 1 – 29 oz can HUNT’S Diced Tomatoes
- 1 – 28 oz can HUNT’S Tomato Sauce
- 1 cup KRAFT Grated Parmesan Cheese
- 3 cups beef broth
- 2 cups white rice, cooked
- In a skillet over medium heat, brown ground beef and strain. Add beef to slow cooker.
- Add peppers, onions, seasoning, tomatoes, tomato sauce, cheese and beef broth to slow cooker.
- Cook on high for 4 hours.
- Add cooked rice to slow cooker and continue cooking for 30 minutes to 1 hour.
