Last week I decided to take a step into the world of actual meal planning. For most people, the concept is like DUH! but for me it was something I had to step into very slowly. I’ve always been the kind of person that cooks what I want, when I want and only what I’m in the mood for. That lifestyle makes meal planning even just days in advance a real challenge. Not knowing whether I’d be in the mood for chicken or beef, green beans or corn, rolls or biscuits .. well… you get the idea. But I decided it was time to stop spending as much time at the grocery store as my own house.
I successfully planned out meals for 4 days last week and this week I’m shooting for the full 5.
Now one of those meals was this Chicken n Rice that I threw together in the slow cooker, a very overused cooking tool in my kitchen. I can’t help but love something that does all the work for me especially when it means I won’t have a toddler tugging on my shirt while I’m standing over the stove.

Ingredients
- 3 chicken breasts, boneless/skinless
- 1 small can Campbell’s condensed cream of chicken soup
- 3 cups chicken broth
- 1/2 cup baby carrots, diced
- 1/2 cup onion, diced
- 1/2 cup sweet peas
- 1 small can sweet corn, drained
- 1 box Uncle Ben’s Chicken Rice
Instructions
- Place the chicken breasts on the bottom of the slow cooker on low heat.
- Mix together the cream of chicken and chicken broth.Pour it over the chicken.
- Add the carrots and onion. Cook on low for 5 hours 30 minutes.
- Cook the rice according to package directions and add to the slow cooker.
- Add the corn and peas, stir well until the chicken shreds.
- Continue cooking on low for 30 minutes and serve.

I just started trying to do some menu planning too. I’m like you to where I like to cook what I want…when I want it! This recipe sounds delicious! I love using my crock pot…looks like I’ll be adding this to my list of “must try”.
This recipe looks YUMMY! It’s def goin into my rotation! As for the meal planning, it took me a long time to get into the groove of it. I tried to do the whole pick something for everyday and then stick to cooking that. Well they never got cooked! So I decided to make a list of meals I wanted to cook, and the ingredients I needed for those meals. Then that day or the night before I pick a meal off the list and cook that. IT works out so much better for us! I can actually stick to my meal plans!
Excellent recipe! This has all my favorites in it. It sounds weird, but I love corn and green onions together with potatoes.
I love my slow cooker. Mmm. I don’t meal plan totally either. Though when we go shopping I figure out what meals I want to make to buy things… but I don’t always stick to it either. :) this will be on next weeks meal list.
My idea of meal planning is remembering to defrost something from the freezer before noon. Ha!
My slow cooker is overused as well and will be for life! I love meal planning and actually just started a few months ago. Not sure why I didn’t do this sooner. This looks like a yummy dish everyone in my home would enjoy.
