Recipe | Loaded Baked Potato Salad Side Dish

Still planning out your Memorial Day menu? This loaded baked potato side dish is easy to make and will go great with burgers, steak or even chicken. It has all of the flavors of a loaded baked potato without heating up the house with the oven. We made this to go alongside some steaks we picked up for a little family grilling. It’s one of my personal favorites because I’m not a fan of traditional mustard-mayo potato salad. Even the kids gobble this one up!

  • 4 large red potatoes, diced
  • 4 thick cut strips of bacon
  • ⅓ cup light Mayo
  • ⅓ cup sour cream
  • ¼ teaspoon dill weed
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ⅓ cup shredded cheddar cheese
  • ¼ cup chopped green onions
  1. Boil potatoes for 20-25 minutes, until fork tender.
  2. Drain potatoes and set aside to cool.
  3. Cut bacon into small strips and fry until crispy. Set aside to cool.
  4. In a small bowl combine mayo, sour cream, dill weed, salt and pepper.
  5. Gently toss potatoes with the creamy mixture and top with cheese, green onions and bacon.
  6. Chill for later or serve immediately.

    MMMM! Almost exactly like I make mine. We like the added crunch of sweet onions so add them in as well!

      Oh that sounds good. I’m lucky to get away with green onions that Jon can pick out, he’d be grumpy if I put real ones in there.
