Memorial Day weekend just kinda snuck up on me this year. I’ve spent the last couple of weeks thinking the holiday was next weekend. So I find myself scrambling to put together a menu for the holiday which typically consists of the tradition grilling foods … hot dogs, hamburgers, hobo potatoes and a side salad or two. Since I’m still working on not going overboard with my calorie intake I decided to make one of my all-time favorite fruit salads in lightened-up kinda way.

There’s lots of little things you can do with recipes to make them lighter and taste just as good. One of my favorite tricks is to substitute the sweetener with Truvia Baking Blend. It still provides a sugar-like taste and texture in recipes, but with 75% fewer calories and twice the amount of sweetness of sugar. So less is more when you’re using Truvia Baking Blend!

This grape salad is always a hit with the kids (and adults). Let’s just hope you have better luck finding white grapes than I did. I spent a week looking at empty shelves in local stores before I finally found them. Black seedless (or red) is also great to use in this recipe. You get a little sweet with the sour.

Lightened Up Creamy Grape Salad Recipe

Type: Dessert
Serves: 6
  • 1 pound white grapes, seedless
  • 1 pound black grapes, seedless
  • 4 ounces light cream cheese, room temperature
  • 12 ounces light vanilla yogurt
  • 3 tablespoons Truvia Baking Blend
  • ½ cup sweetened granola
  1. Wash and pat dry the grapes. Set aside.
  2. In the bowl of an electric mixer, whisk cream cheese, yogurt and Truvia Baking Blend until smooth.
  3. Toss grapes in the mixture and sprinkle with granola.
  4. Refrigerate until ready to serve (within 24 hours).
