Let’s Make Whoopie! err ummm Whoopie Pies!

This Valentine’s Day, I’m all about making whoopie … Whoopie Pies that is! They’re sweet, moist, incredibly indulgent and perfect for a little lovey dovey dessert with your husband this Valentine’s Day. If you’ve never had one, you’re seriously missing out! Not only are they easy to make but even kind of fun. Or perhaps I’m easily amused while squishing the whoopie cakes together over the buttercream.

And new for 2011, Wilton just added these incredibly adorable heart shaped whoopie pie pans to their product line up. Each pan contains twelve heart cavities that are perfectly sized for mini Whoopie Pie cakes.

While there are probably several thousand recipes out there, I’ve found that the simplest version is often just as tasty and can be whipped up in minutes. I typically start with a box of Duncan Hines cake mix, reduce the water to 1 – 1/4 cups, reduce the oil to 1/3 cup and add a 4 serving box of instant pudding mix to the batter. You can sandwich these little cakes around whatever filling you like whether you enjoy the simplicity of canned frosting or the indulgence of homemade buttercream. For these pretty little red velvet whoopie pies I used a cherry buttercream (recipe coming to Oh My Sugar High soon).

And since we were in the mood for mini treats, I also used the leftover batter to create some mini cupcakes that are easy enough to decorate, especially when Wilton does all of the work for you.

You may remember my little royal icing roses fail last year. Well, the good news is you don’t have to be an icing sculpting pro to have beautiful roses. Wilton makes premade candy roses that are perfect for topping cakes or making a big, beautiful statement on mini cupcakes.

As we all know, Valentine’s Day is about sharing the love. This year we’re using Wilton’s new treat boxes to share our mini treats. They assemble quickly and even come with matching labels. My children and I decided to share our box of mini cakes with daddy to take to work. Maybe he’ll even spread the love (and calories) with his co-workers.
