Let It Snow! Coconut Cream Layer Cake

I’m officially in utter disbelief. Here it is now January 2012 and we have yet to get more than a dusting of snow that didn’t melt the second it hit the ground. In my nearly 29 years, I’ve never lived in central Illinois and gone a winter without snow. Is it possible this will be the year?

I sure hope not. I can’t stand the thought of my kids missing out on the fun of snow angels, snowmen, sledding and snowball fights. It just wouldn’t be right.

As a last ditch effort, I’m offering up a Let It Snow Coconut Cream Cake to the elusive snow fairy.

Who could resist two layers of white cake sandwiched around coconut cream pudding then smothered in frosty white buttercream, dripping ice blue poured fondant and powdery soft, sweet coconut flakes?

This just begs for winter!

    • It’s way better than I thought it would be. I’m usually not a coconut fan but the flavor is so different when it’s real and subtle mixed with the cake and buttercream.

      • See now that I could do. I’m not a huge cocnut fan.

        Have you posted your buttercream recipe somewhere?

        • The recipe I used this time is linked under the last photo. Honestly, I don’t usually measure when I make buttercream but I had to this time to make sure it would come out snow white.

          • I searched your blog and came up with the vanilla buttercream you did a long time ago. You could easily update the pictures but oh my does it look lovely.

            I have to stay away from your cake recipes. I love cake, it’s my one thing. Yours are always so delicious!!

            • There’s a ton of buttercream recipes out there but it’s really one of those things you adjust to your own likes and consistency.

    • You sure? When’s the last time you tried some? I use to hate coconut but I’ve started to acquire a taste for it.

  10. Well, up until Sunday, we only had a dusting. Kids were getting so mad and are so happy we have tons of snow now:) This cake looks so good I love coconut cakes!!!

    • Did you get some good snow on Sunday?

      • Yep we got about 14 inches of snow total, too bad it is too cold to play out in it right now. Temps didn’t get above 1 yesterday with the windchill. Today seems better so they can play this afternoon.

    • Aww another coconut hater. LOL But I get it, it’s one of those things you love or hate. It would still be good with a vanilla filling.

    The night before the kids went back to school we got our first real snow. 3 or so inches. it’s not enough to really build snowman with but it’s sticking around this time I think. New years day it was 50 degrees here! WOW!! What a bizarre winter it has been.

    • That’s crazy! NY usually gets a lot more snow than IL doesn’t it? It seems like a warm winter for everyone this year.

    • Ahhh another coconut hater, you guys are multiplying. LOL I think the cake would surprise you, the coconut flavor is very sweet and subtle in this cake.

    • Thanks Tiff … I want some too … I forced myself NOT to have a slice for breakfast. I’m not exactly on a diet but I’m being more mindful of what I eat and when.

    • Thanks Em :) I’m loving that cake stand too, I just wish Martha made smaller ones, I avoid making really big cakes when I can.
