Kid Friendly Recipe | Mini Mexican Pizzas

Taco night around here usually means I’m tossing some seasoned meat on corn chips with the with all the fixin’s. It’s easy peasy but it’s also kinda boring. The last time we did “tacos” the kids were begging for homemade pizzas but since I already had everything for the tacos in the fridge I thought it would be fun to give their must-have pizza .. just a little differently than they expected.

This dish is easy enough for kids to make themselves and really doesn’t require a formal “recipe” You just brown up and season the beef as you normally would (I love the Taco Bell seasoning mix), chop up your favorite toppings and toss a few small tortillas in the oven, directly on the rack, at 350 for about 5 minutes. We built our mini Mexican pizzas with these layers …

From bottom to top:

  1. tortilla
  2. seasoned beef
  3. shredded cheese
  4. tortilla
  5. sour cream
  6. lettuce
  7. tomatoes & black olives

You could even add a layer of re-fried beans or some taco sauce, if that’s something your kids like. Just slice and serve!
