Last week I took an hour out of my laundry and child chasing duties to sit in on a webinar with the folks at Land O Lakes Kitchen and some wonderful food bloggers. The topic was 2013 Food Trends. As someone that loves being in the kitchen more than anywhere else in the house, this really caught my interest. I love trying new foods, cooking techniques and even putting a twist on old favorites. So it was really interesting to hear from fellow food bloggers and get a glimpse into some of the foods that are sure to be popular in 2013.

A Spicy Perspective says … COMFORT FOOD GONE GLOBAL. “In every culture in the world you will find foods that taste like home. Bring them into your kitchen.”
A Farmgirl’s Dabbles says … WHOLE GRAINS. “There’s a full on revival of whole and ancient grains going on right now. Millet, Israeli Couscous and Red Quinoa. Keep trying new grains … you’ll eventually find one you’ll want to add to your pantry.”
The Little Kitchen says … ASIAN INFLUENCES. “There are Asian influences everywhere in fashion, decor and food.”
Two Peas & Their Pod says … POPCORN. “It’s going to be the snack food everyone is talking about. Be on the lookout for unique flavor combinations like Twix Caramel and Garlic Rosemary Parmesan popcorn.”
Now there are days where I feel like I’m the last to know about food trends. It took a solid year of moms talking about their love of quinoa for me to actually consider trying it. Of course it doesn’t help that I live in a tiny town in the Midwest with limited options when it comes to food. I have to work with what’s available and wait for new and upcoming foods to hit our shelves.
Bacon maybe not be all that trendy, unless of course it’s crumbled over a cupcake or dipped in chocolate, but it’s a staple in this house. I love finding ways to use it just so I can collect the leftover grease. It’s a very outdated way of cooking but there is no better flavor in the world than bacon grease. I use it to flavor stock, in vegetable side dishes, even when browning ground beef. So if someone gives me an excuse to cook bacon, I jump on it and then find ways to use the leftovers to bring flavor to boring dishes. I just add new grease as it becomes available and pop my sealed mason jar back in the fridge to use when I need it.
So, bacon … mmmm … there’s a million ways to use it but my favorite is in a traditional BLT. Is there really anything better than crisp lettuce, juicy garden tomato and tender bacon?
I think not!
Since winter tomatoes are lacking in flavor I decided to pair my sandwich favorite with a brand new product from Land O Lakes. They’ve created four Saute Express flavors that are brilliant. I usually just toss some butter and olive oil in the skillet but these little cubes are pre-packaged with unique flavors to make them easy and ready when you need them.
Now while these are meant to be used with proteins and veggies, I’ve also found they are perfect for adding a kick of flavor to grilled bread. The Italian Herb flavor brings out a whole new side to the BLT sandwich, especially if your off-season tomatoes are lacking in flavor.
These Italian Herb BLT Sandwiches are an easy lunch to throw together in less than 20 minutes and only requires one skillet. I like to start with a nice thick-cut bacon that is skillet fried until crispy on the outside but stick tender to bite into. Like I said before, I collect that leftover bacon grease into my mason jar and wipe off any burnt bits with a paper towel. The skillet goes back on the stove over medium heat where I melt down half of the Saute Starter Italian Herb cube and grill my honey wheat bread with the bacon, some sliced grape tomatoes and mozzarella cheese. Once it comes off the skillet the lettuce goes on and lunch is ready.
