My favorite time of the year has always been the Fall and Winter months. It’s the time of the year I can snuggle up in baggy sweat pants, fuzzy socks and indulge in warm desserts (without too much guilt). This year I’m finding ways to make my favorite desserts tastier with an ingredient you might have thought was only reserved for coffee. International Delight gourmet coffee creamers come in so many wonderful flavors it would be a shame to limit them to a hot mug of coffee, especially when you can enjoy them in a hot mug of CAKE.

Peppermint Mocha Chocolate Mug Cake

While I was out shopping I discovered the amazing selection of seasonal International Delight creamers that includes: Hershey’s S’mores, Pumpkin Pie Spice, Salted Caramel Mocha, White Chocolate Raspberry and my personal favorite, Peppermint Mocha.

This particular flavor was so delicious that I knew it would be perfect for a holiday mug cake that only needs a few simple ingredients and a dash or two of the Peppermint Mocha creamer. Together, it’s the perfect single serving dessert (or shareable dessert with someone you love) on a cold night. Peppermint Mocha Chocolate Mug Cake Recipe

Serves: 1 mug
Ingredients
  • 4 tablespoons self-rising flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons whole milk
  • 1 tablespoon International Delight Peppermint Mocha creamer
  • 3 tablespoons vegetable oil
  • 1 egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk chocolate chips
  • 1 tablespoon Andes Peppermint Crunch baking chips
topping
  • ½ cup powdered sugar
  • 1 tablespoon International Delight Peppermint Mocha creamer
  • whipped cream
  • sprinkle of Andes Peppermint Crunch baking chips
Instructions
  1. In a small mixing bowl, whisk together flour, sugar and cocoa powder.
  2. Add milk, creamer, oil and egg. Whisk until combined.
  3. Add vanilla, chocolate chips and peppermint chips. Mix until combined.
  4. Pour the batter into a LARGE microwave safe coffee mug and microwave for 3 minutes.
  5. Note: the cake will rise a few inches above the mug while cooking but will sink back into the mug when done.
  6. In a small mixing bowl whisk together powdered sugar and creamer until smooth.
  7. Pour over the cake and top with whipped cream and peppermint chips.
