Holiday Feast – Homemade Noodles Side Dish Recipe

If you were to ask me what my favorite family recipe is, I would tell you … my mama’s homemade chicken ‘n noodles. It’s a yearly request for my birthday dinner and is the one side dish during the holidays that I look forward to the most.

Growing up, I watched my mom make these noodles hundreds of times but never truly appreciated the love she put into making them until now. You could just as easily buy a package of egg noodles at the grocery store, but they don’t come with the comfort that a homemade side dish does. This Thanksgiving, we’ll be serving up this very special pasta dish I’m sharing with you and I hope that you’ll give it a try to share with your own family during your homemade holiday feast.

Last week during my homemade holiday feast introduction I mentioned how a stand mixer is the foundation of your kitchen, well this recipe is just another example of how it can be used to prepare your family meals in ways that you might not have considered. While I kept the preparation simple by using the dough hook to create my pasta, KitchenAid also offers a number of pasta making attachments that can be used with your mixer should you decide to make pasta more frequently.

Making the Homemade Noodles Side Dish

Noodle Dough Ingredients

  • 3 eggs
  • 1/2 tsp salt
  • 2 TBS heavy whipping cream
  • 2 cups all purpose flour

KitchenAid Tools

  • KitchenAid Stand Mixer
  • Whisk and Dough Hook

Broth Ingredients

  • 2 – 49oz cans Swanson chicken broth
  • 6-8 boneless skinless chicken thighs, trim the fat
  • 6-8 small red potatoes (optional)
  • 1 lb baby carrots
  • 1/2 medium yellow onion
  • 4 stalks celery, 1/2 inch cubes
  • 1 tsp poultry seasoning
  • salt and pepper

The night before the big holiday feast, you’ll want to make the noodles so they have ample time to dry. In fact, you could even make this side dish two days before and reheat it for dinner.

Using your KitchenAid stand mixer and the whisk, mix the eggs, cream and salt for about 30 seconds on speed 2.

Replace the whisk with the dough hook and on speed 2, add 1 cup of flour.

Once incorporated, add the remaining flour 1/3 of a cup at a time until the dough pulls away from the bowl and forms a ball around the hook.

Tip: Visit your local hardware store and pick up a large canvas drop cloth. These large cloths can be cut to fit your countertop and are perfect for rolling dough on!

Lightly flour a canvas cloth and using a rolling pin, roll the dough until it’s about 1/8 of an inch in height. It will be thin, but not thin enough to be transparent.

Allow the noodle dough to dry for at least 4 hours, preferably overnight.

Using a sharp knife or pizza cutter, cut the dough into long strips 1/2 in to 1 inch wide.

Over high heat, in a large pot, combine all of the broth ingredients and allow to boil uncovered for 1 hour.

Remove the chicken and vegetables and set aside in a large dish and cover.

Add the noodles, a few at a time to the broth and stir frequently to prevent them from sticking to the bottom. Continue boiling for about 30 minutes or until fork tender. You can also add a packet of McCormick’s chicken gravy powder just before serving if you like a thicker gravy to serve the noodles in.

Serve the noodles as a side dish and save the chicken and vegetables for a meal later in the week or make this as a complete meal anytime your family is craving a comforting homemade chicken n noodles dinner.

  2. The mixer you’re using looks awesome, much better than mixing by hand! I’ve never made noodles (or any other pasta) either and I’d love to try making pasta. Could this recipe be adapted to be done by hand? the dish looks very tasty. Is it tastier the second day, like a soup?

      Val, I’m sure you could do it by hand, I imagine my mom did before she got her stand mixer. If I remember right (I was young) I believe she used a fork to mix the dough. And yes, I actually love the noodles even more the second day.

    What kind of KitchenAid stand mixer do you have? An artisan?

  8. I remember making noodles with my Mom when I was a kid. They were so good! We use to roll the dough into a cylinder (like when you make cinnamon rolls), slice the cylinder, then unroll the noodles. It made them really easy to slice and they were all uniform size. I’ve never made noodles and would love to give it a try. Thanks for you recipe!

    my grandmother was the noodle maker in our family. She was a special person and boy did she ever make delicious noodles I have tried to make them like hers and mine do not taste the same as I remember. I love the pasta attachements these would make it so much easier and my kids would love it

    you could make your own stock from the neck, heart, liver, etc and then mix flour, eggs and some stock together to make dumplings :)

    I make my mom’s homemade Chicken and Noodles. She would roll out the dough roll it up like a jelly roll and slice. My job when I was a kid was to toss the sliced pinwheel noodles and they’d open up into the final product that got put in the broth. They were sooo good. Of course she always had to make extra since I’d sneak and eat them raw.

    I like that this recipe seems very involved but only requires one extra attachment aside from the mixer. If you told me I could make homemade noodles with just the Hook attachment I would say you’re crazy! Thanks for another great receipe.

  54. Oh boy, does this look familiar. We were members of the Moose Club and we made homemade noodles for an annual event every year. I miss those days. we moved where there is no club so we miss being involved with all the celebrations we were involved in. This mixer sure would have been nice to have back then.     I am surprised that the noodles have to cook for 30 minutes tho. I always thought that fresh noodles did not take that long to cook. That isn’t a typo is it?

    My mother used to make homemade chicken and noodles when we were little and I remember helping her cut the noodles. This dish is one of my favorite childhood memories but I have never had the time (or patience) to repeat it. With a KitchenAid mixer and the pasta-making attachments, homemade noodles would no longer be a memory from my past.
