Pork is one of those meats we tend to take for granted around our house. It’s often used to flavor meals (hello BACON) but doesn’t take center stage on the dinner table as often as my husband would like. I like to use it most often for special occasions. For instance, pork makes an appearance for the short months of summer grilling, then again as the centerpiece of our Christmas dinner and again for Easter. I’d actually be perfect happy with trading out the stinky Thanksgiving turkey for a ham but the rest of the family wouldn’t have it.
As for cooking pork, there’s no one way that’s better than the other (in my opinion). I enjoy grilling a tender pork loin in the summer, barbecuing shredded pork for potato skins and even baking it into a delicious sausage-cheddar appetizer.
When it comes to Easter dinner, there’s only one way to do it this house. We throw a big ham right in the slow cooker. I love how it keeps the ham juicy, tender and the glaze thickens up so I can add a little extra to my plate. My favorite way to cook up the ham starts by poking a few whole cloves into the surface and then I pour over a glaze of brown sugar, pineapple juice and maraschino cherry juice. This sweet concoction tastes amazing and is great to use later in a bowl of ham n beans.
