Whether you’re planning for a holiday meal, Spring get-together or just looking for fresh vegetables to feed a crowd, this double duty side dish will be something great to add to your menu. Thanks to the McCormick Spring Look Book, I found a lot of recipes that I can’t wait to try and some that I already have and love. Separately, the Garlic & Herb Oven Roasted Potatoes and Ginger Glazed Carrots are perfect for a quick meal but together, they really brighten up the table and can feed quite a few people.
We adjusted the recipes a bit to fit our tastes and cooking method but the baby carrots and diced potatoes both fit nicely into one large baking dish to make clean-up that much easier.
For the potato side dish you can create an herb blend that really wakens up an otherwise boring potato using McCormick’s Oregano Leaves, Paprika, Thyme Leaves, Sea Salt and Garlic Powder. Mixed with some olive oil and tossed with the potatoes, it literally takes less than 5 minutes to prep the potatoes for the oven.
One spice I rarely use in my kitchen is McCormick Ground Ginger and let me tell you, this will be no more. I loved the aroma and bite it gives to carrots. Tossed with sweet honey, nutmeg, parsley flakes and salt, these carrots turn out just about perfect roasted in the oven next to the potatoes.
