In this house, we are no strangers to dining out. After each of our kids were born, we ate from restaurant take-out menus more than I’d care to admit. I quickly became very familiar with the menus, the flavors and even fell madly in love with a few dishes.
Now that we’re beyond the baby days, I have no excuses I can use to not cook. Most nights, I even enjoy cooking but that doesn’t take away the craving for my favorite take-out meals. One being Chili’s Monterey Chicken. Chicken, cheese, barbecue, bacon .. yum!
Instead of eating out and draining our grocery budget, I found a way to make this delicious dish at home. Unfortunately, it doesn’t come without the restaurant calories.
Making this dish is relatively simple. We start off with frying up some bacon strips over medium heat until crispy, set them aside on a paper towel to drain and leave the bacon fat behind to fry the chicken breasts on each side.
Fry the chicken on each side and once fully cooked, top them off with your favorite barbecue sauce, mine being Maul’s Original.
Toss on a few strips of crispy bacon … and don’t forget the shredded cheddar cheese. Turn off the heat and put the lid on top to melt the cheese.
Served up with some steamed broccoli and maybe even those tasty Cheddar Garlic Butter Biscuits I made the other day, you’ve got one tasty take-out meal made right in your own kitchen.

Awesome. I am trying to figure out if the original version is with fried chicken but this looks great to make at home. It is on the gluten free menu so maybe it isn’t breaded but it looks breaded in the pictures on their website. I will give this a try at home with turkey bacon. Lol. Thanks!
