{GIVEAWAY} Green Velvet Cupcakes With Fluffy White Icing for St. Patrick’s Day

No matter the holiday, cupcakes are one treat you can dress up for any occasion. Green velvet cupcakes are no exception. Much like red velvet cupcakes, these have a velvet texture and vibrant color … green for St. Patrick’s Day!

Making these green velvet cupcakes is extremely easy and comes with the added bonus of playing with food coloring. When I’m not working with coloring buttercream, I love using McCormick green food color to brighten up a cake batter. A squeeze or two of the bottle and you can turn a chocolate cake batter into a gorgeous emerald green color.

Inside this soft cupcake you get crumbles of deep green. It goes perfectly with a light and fluffy white frosting that only uses a few simple ingredients.

I keep half a dozen or so bottles of McCormick Pure Vanilla Extract on hand at any given time and it gives the fluffy frosting a great flavor.

  • Cupcakes
  • 1 package (18 1/4 ounces) German chocolate cake mix with pudding
  • 1 cup sour cream
  • 1/2 cup water
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup vegetable oil
  • 1 bottle (1 ounce) McCormick® Green Food Color
  • 3 eggs
  • 2 teaspoons McCormick® Pure Vanilla Extract
  • Fluffy White Frosting
  • 1-1/4 cups sugar
  • 3 egg whites
  • 1/4 cup water
  • 1/2 teaspoon cream of tartar
  • 1 tablespoon McCormick Pure Vanilla Extract

Instructions

  1. Set 350°F. Add sour cream, cake mix, water, cocoa powder, food color, oil, eggs and vanilla in a bowl with electric mixer with low speed just until moistened, scraping sides of bowl frequently.
  2. Pour batter into 24 paper-lined muffin cups, filling each cup 2/3 full.
  3. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pans; cool completely on wire rack.
  4. For the frosting, in an electric mixer with the wire whisk attachment, beat the sugar, egg whites, water and cream of tartar about 3 minutes until foamy.
  5. Add the mixture to a heat safe bowl and place it over a pot of simmering water. Stirring occasionally, heat the mixture until warm to the touch and the sugar is dissolved, about 5 minutes.
  6. Add the mixture back to the electric mixer bowl, add the vanilla and beat at a high speed for 15 minutes until thick with soft peaks.
  7. Frost the cupcakes and serve.

Recipe | Easter Peeps Bunny Rice Krispies Treats Pops

This morning my children woke up to a mass of pastel candy melts, Rice Krispies Treats and Peeps bunnies all over our island. My youngest excitedly screeched, is it Easter mommy? Imagine her disappointment when I had to tell her Easter is still over a month away but that doesn’t mean we can’t start celebrating now. After all, Easter treats are more fun when they’re around the house for several weeks leading up to the actual holiday. I like to think I’m helping build excitement.

One of our most favorite treats for the holidays is Rice Krispies Treats. And they only get yummier with a layer of Wilton candy melts, sprinkles and sugary sweet Peeps bunnies.

 

Step 1 – Gather some supplies including Peeps bunnies (or chicks), Wilton colored candy melts and cookie pop sticks.

Step 2 – Create your favorite Rice Krispies Treats recipe and let them cool in a rectangular pan.

Step 3 – Melt the candy melts on a plate and dip one side of the treat. You can also use a pastry brush or spoon to fill in all of the crevices.

Step 4 – Add some pastel sprinkles along the border. No need to fill in the middle since the Peeps Bunnies will go there.

Step 5 – While the candy melts are still soft, place a Peeps Bunny right in the center. Press it down a bit so it sticks.

Step 6 – Let the candy melt harden up a bit before jabbing a sick into the treat.

How to Make Easter Rice Krispies Peeps Pops

If you don’t have cookie pop sticks on hand you can certainly leave them as bars. You just get to avoid sticky fingers when you put them on pop sticks.

These sweet Rice Krispies Treats pops are perfect for class parties (if your child’s school allows homemade treats) and they’re great for Easter baskets too if you just slip a candy bag over the top of each one and tie it off with some pastel ribbon.

Cherry Heart Cutout Cupcakes for Valentine’s Day

I’m kind of in love with Valentine’s Day, yes, even the whole commercialized-Hallmark-holiday version.

I love the flowers, the candy, the cards, the sappy love story movies, the conversation hearts and the romance, well, maybe just the idea of romance. My husband has yet to discover his hidden talent for romantic gestures. I refuse to give up on the idea of being swept off my feet. Most of all, I love making other people in my life feel loved. The best way I know to do that is to spoil them with baked goodies.

These cherry heart cutout chocolate cupcakes are no exception. And to be honest, chocolate is actually quite healthy!

Each cupcake is imprinted with love. A cutout in the center leaves space to fill each cupcake with sweet cherry pie filling. Or you could pick your own favorite filling like strawberries, chocolate fudge, conversation heart candies … pretty much anything that will fit.

So how do you make these? Well, it’s pretty simple.

1.  Bake and completely cool your favorite cake mix cupcakes.

2.  Use a Wilton heart shaped fondant cutter to press into the center of the cupcake.

3. Sometimes the cutter will pull the cake cake right out for you.

4. If the cake doesn’t come out, just use a fork to gently pull the heart out from the edge.

5. Dust the cupcake with powdered sugar.

6. Spoon a dollop of cherry pie filling into the center.

That’s it!

Chunky Marshmallow Conversation Heart Rice Krispies Treat Heart Pops for Valentine’s Day

Rice Krispies Treats are something we love making for almost any holiday. It’s a dessert that everyone enjoys eating and it can be used or shaped in just about anything you can imagine.

For Valentine’s Day, we love making them into hearts. Last year I tried out a red velvet rice krispies treat snack using cake batter and cream cheese frosting that was a big hit. This year I made them using one of my favorite Valentine’s Day candies.

What makes these a little bit different is the big chunks of marshmallows in every bite. When you mix the mini marshmallows in at the same time as the cereal they don’t melt so you get big chunks of gooey sweetness.

If you’re feeling creative you can also push a stick into them, wrap them in a candy bag, tie with some pretty ribbon and share!

Conversation Heart Rice Krispies Treat Pops

Ingredients

  • 4 tablespoons butter
  • 10 drops red food coloring
  • 40 large marshmallows
  • 6 cups Rice Krispies cereal
  • 2 cups mini marshmallows
  • 1 cup conversation heart candies

Instructions

  1. Spray a large baking sheet (with a ledge) with non-stick cooking spray.
  2. Over medium-low heat, melt butter.
  3. Add food coloring, mix and add large marshmallows. Stir often until fully melted.
  4. Remove from heat, add cereal and mini marshmallows.
  5. Stir until combined.
  6. Spray your hands with non-stick cooking spray and press the cereal mix onto the cookie sheet until it’s flat and even.
  7. Randomly press candies into the cereal treats.
  8. Cool for one hour then cut into bars or hearts with a cookie cutter.
