Do you ever have a day when you start thinking of things to cook for dinner and there’s isn’t a thing that sounds good to eat?
We have days like the every few weeks. We go through our list of common meals, I go through cookbooks and it’s all just blah! That’s when we switch things up and have breakfast for dinner. The kids especially love this kind of dinner because I get to be the short-order cook and they get to pick and choose their favorite breakfast foods. There are even times when breakfast actually looks like dinner. That was the case when I tried something new … waffle breakfast sandwiches!
You can turn two Eggo Waffles into 4 mini sandwiches filled with your favorite layers like ham, egg and cheese. It’s a quick dish that only takes about 5 minutes to prepare. Those mini sandwiches with a side of my favorite skillet home fries is the perfect pairing.
To make this dish:
- Toast two Eggo Waffles as directed on the packaging.
- Scramble and fry two eggs. Fold and layer onto a waffle.
- Heat the ham in the skillet, then add it to the sandwich with a slice of cheese.
- Top the sandwich with the second waffle, slice and serve.
