In just a few short days the school year for our kids will be over. I’ve got three months of summer vacation to keep the kids entertained and well fed. Typically they come home from school “starving” so they say and I try to put together a light snack before dinner. This probably won’t change during summer break so I’ve had my thinking cap on while I keep a running list of snack ideas to put on the family calendar.
Rice cakes are not a snack that’s been on our shopping list in recent years. Everything I’ve ever thought about them starts with the word cardboard. And then I was introduced to Lundberg Rice Cakes, which are not only gluten free, vegan, USDA Organic and non GMO, they’re also quite tasty.
We received three different flavors to try out including: Hemp-a-licious, Sweet Chili and Kettle Corn. Personally, I could go through a whole bag of the Kettle Corn flavor in a day if I let myself. They’ve got the crunch of a rice cake with an added sweetness that makes them delicious and perfect for a little sweet tooth craving. But for the kids, they always want something more creative when it comes to snacking.
And since my son is a vegetarian I’m always looking for ways to sneak a little more protein into his diet. These rice cakes slathered in almond butter is a great way to do that.
Kettle Corn rice cakes turned into a s’mores snack slathered in almond butter, marshmallow creme, bananas and drizzled with chocolate will make you rethink everything you’ve ever thought of rice cakes!
- 4 Lundberg Kettle Corn rice cakes
- ¼ cup marshmallow creme
- ¼ cup almond butter
- 2 ripe bananas
- ¼ cup semi-sweet or dark chocolate, melted
- Spread 1 tablespoon of marshmallow creme over each rice cake.
- Spread 1 tablespoon of almond butter over each rice cake.
- Top with sliced bananas.
- Drizzle with melted semi-sweet chocolate.
